Domaine Louis Michel 1er Cru Forets, Chablis 2018

Classicaly austere nose of white stone fruit, chalk and minerals. Notes of undergrowth and fern, mixed with other spicier ripe fruit and pepper aromas, suggesting a lively, very mineral and chalky palate, with the famous gunflint taste, sometimes with a suggestion of liquorice notes. Citrus, green apple and pear fruit flavours last well into the deliciously refreshing, lengthy finish.

Shellfish, raw fish, charcuterie, canapes or roasted river fish. Marvelous as a glass by itself too.

Sourced exclusively from the 1er Cru Forets vineyard on the left bank of the Serein in Kimmeridgian soils of hard limestone in clay, and very stony soil. A very shallow layer of fossilised shells sits just below the surfact of the steep slopes. Bunches are hand harvested and sorted by hand at the winery, any berries that have the slightest hint of rot or unripeness are discarded.

Fermentation is in stainless steel and temperature controlled, with the wine resting on lees for a short time to add comlpexity.
